Dair Nua is doing something no one else in Ireland has done before in the modern whiskey era: sourcing local Irish wood, building casks by hand, and collaborating with distilleries to explore how Irish-grown oak, chestnut, acacia, and other native species influence the final character of the whiskey we love.
