We’re very lucky to collaborate for a second time this year with Sir Maurice O’Connell and Wayward Irish Spirits in Killarney, Co. Kerry.
For part 2 of our partnership we’re releasing a delicious 10 year old Single Grain Irish whiskey that has been matured for just under 10 years in an ex-bourbon barrel and finished for 20 months in a Catoctin Creek American Rye Cask.
Bottled at a glorious 62.8% ABV, this whiskey is a triumph of buttery sweetness and white peppery effervescence with a texture that coats the mouth.

Tasting notes:
Nose
Opens with the comforting warmth of freshly baked sugar dusted butter cookies, delicate layers of vanilla custard cream biscuits, and a gentle sweetness that immediately invites you in. There’s a nostalgic, bakery-fresh charm that sets the tone for what follows.
Palate
The sweetness unfolds generously, with crème brûlée notes coating the tongue, carried by a silky, creamy texture that gives the whiskey real presence. The bourbon influence provides depth and richness, while the rye cask makes its mark with a lively twist, an elegant peppery spice that builds softly at the edges, adding structure and intrigue without overwhelming the sweetness.
