Waterford Distillery

Waterford Distillery is on a quest to unearth whisky's most natural flavours and is the largest producer of organic whisky in the world. The team at Waterford has sourced barley from almost 100 Irish farms, including organic & biodynamically run, as well as heritage grains. Influenced by the world's greatest winemakers, they obsessively bring the same intellectual drive, mythology & rigour to single malt whisky.

Their range of Single Farm Origins showcase barley flavours derived from individual Irish farms, terroir by terroir, each a single malt in its own right. They are expressions of precision and rarity. Yet, gathered together into a Cuvée, layer by layer, these component spirits create our definitive, most complex single malt.

The whiskies we'll sample

We'll enjoy 5 x30ml samples of Waterford whisky produced from individual farms of barley, produced conventionally, organically and biodynamically as well as a cuvee of a number of single farms. Each single malt whisky is made 100% from Irish malted barley that can be traced to the individual fields that produced the crop.

Familiarize yourself with Waterford Distillery

Stores & Sips founder Barry Chandler produced two groundbreaking podcast seasons focused entirely on whisky production at Waterford Distillery. These episodes are well worth listening to in advance of our tasting as there's SO much to cover and learn about Waterford Distillery and the whiskies produced on the banks of the River Suir.
