Tipperary Boutique Distillery

The Tipperary Boutique Distillery is located near Clonmel, Tipperary in the Suir River Valley, with the timeless backdrops of the Comeragh Mountains to the south and the Slievenamon peak to the northeast.

Founded by Managing Director Jennifer Nickerson, her father Stuart Nickerson, and husband Liam Ahearn, the Tipperary Boutique Distillery is at Ballindoney Farm, which Liam’s family has been farming for more than 200 years. 

This intimate understanding and deep relationship to the land is what the founders believe will set their whiskey apart from others. The family farm grows all the barley used in their brand new distillery and they also source their water from the Ballindoney land. Appropriately, Liam’s role is as Chief Agricultural Consultant.

Not to be outdone by Liam, Stuart Nickerson brings 40 years of experience to the distillery from a long career in the Scotch world. With a background in chemical engineering, and a resume that includes managing several prominent Scotch distilleries, Stuart advises on all fermentation and distillation processes, wood choices, and maturation decisions. 

Jennifer, who previously worked in corporate finance, is passionate about whiskey. She was Whisky Magazine’s 2019 Irish Whiskey Brand Ambassador of the year, and in 2020 she oversaw the construction of Tipperary’s first distillery in more than 150 years, and started distilling her own spirits. 

The distillery currently produces 9 casks of new-make per week, and they’re considering adding white spirits to their offerings as well.

Future plans include expanding their “farm to bottle approach” into new markets, and experimenting with various maturation processes and styles.
